In 2023, 500,000 hryvnias were offered for one kilogram of crayfish

Crayfish has been recognized as the most expensive aquaculture product in Ukraine. According to the data magazine The Ukrainian Farmer, the average price for annual crayfish in 2023 was 500 thousand hryvnias per ton.
The largest crayfish farms are located in Volyn, Dnipropetrovsk, Donetsk, Kirovohrad, Kyiv, Mykolaiv, Odesa, Poltava, Sumy and Kharkiv regions. Aquaculture of crayfish involves the creation of special conditions for reproduction and growth, which requires significant investment in infrastructure and care. Modern cultivation technologies allow control of water quality, temperature and nutrition, which contributes to the high quality of the final product.
For comparison, the average prices for other aquaculture products in Ukraine in 2023 were as follows:
- Sturgeon: 312.4 thousand hryvnias per ton.
- Trout: 211.4 thousand hryvnias per ton.
- Freshwater zander: 150 thousand hryvnias per ton.
- Freshwater pike: up to 120 thousand hryvnias per ton.
These data indicate that crayfish farming is the most profitable direction among all aqua farms in Ukraine. The high price of annual crayfish is due not only to the complexity of their cultivation, but also to the high demand for this delicacy. Crayfish are popular among restaurants and gourmets who appreciate their taste and useful properties.
Aquaculture in Ukraine has great potential for development due to the presence of numerous reservoirs and favorable climatic conditions. The government and private investors actively support this sector, which contributes to its continuous growth. The introduction of the latest technologies and management methods allows Ukrainian aqua farms to compete on the international market and export their products abroad.
It is also important to note that the development of aquaculture contributes to the preservation of natural populations of fish and other aquatic organisms, which positively affects the ecosystem. Farming of fish and crayfish reduces the pressure on natural resources, contributes to the rational use of water resources and creates new jobs in the regions where the aqua farms are located.
